Sloppy Joes
Great for a quick family dinner, or parties when you don’t want
to serve a meal but need to offer something hearty. Easily doubled!

  • 1 pound 85% lean ground beef,
    finely ground
  • ¼ cup chopped yellow onion
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons chili powder
  • ½ teaspoon cumin
  • ½ teaspoon paprika
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 15.5-oz. can “no added salt”
    diced tomatoes, drained
  • 2 teaspoons diced jalapeno
    (about ½ a pepper)
  • 1 teaspoon minced garlic
  • ¾ cup ketchup
  • ½ cup frozen corn
  • ¼ cup Plain Mountain High Yoghurt
  • 8 small potato rolls


In a large skillet over medium heat, brown ground beef with onions, Worcestershire sauce, chili powder, cumin, paprika, salt, and pepper for about 5 minutes. Add tomatoes, jalapeno, garlic, and ketchup. Continue cooking for 5 to 10 minutes until beef is thoroughly cooked.

Remove from heat and add frozen corn and yoghurt. Stir to mix well and warm corn through. Serve on potato rolls.
