Spinach Artichoke Dip

Going, going, gone! This party favorite disappears fast.


  • 1 10-oz. pkg. of frozen chopped spinach, thawed and drained
  • 1 14-oz. can of artichoke hearts, drained and chopped
  • 1 cup Plain Mountain High Yoghurt
  • 1 cup shredded mozzarella cheese
  • ¼ cup chopped green onion
  • 1 garlic clove, minced
  • 2 tablespoons chopped red pepper (optional)

Squeeze spinach to remove all water. In a medium glass or ceramic bowl, place spinach, artichoke hearts, yoghurt, mozzarella, onion, and garlic and combine well.

Pour mixture into a glass or ceramic one-quart casserole dish or 9-inch pie plate. Bake at 350°F for 20 to 25 minutes or until heated through. Remove from oven and sprinkle with red peppers, if desired. Serve with toasted bread or whole grain crackers.
