Baked Ham and Apple Loaf

Move over meatloaf! This could become the new family favorite.
  • ¾ pound baked ham, roughly chopped
  • ¼ cup red onion, chopped
  • 1 slice potato bread or one roll
  • ½ cup pecan halves
  • 1 large red apple, cored & roughly chopped
  • 1 tablespoon Italian seasonings
  • 1 teaspoon ground mustard
  • ¼ teaspoon black pepper
  • 3 tablespoon brown sugar, divided
  • 1 large egg
  • ½ cup Plain Mountain High Yoghurt
  • 1 pound ground pork
  • 1 large red apple

Into a food processor fitted with a mixing blade, place the baked ham, onion, bread, pecans, cored and chopped apple, Italian seasonings, mustard, pepper, and 1 tablespoon of the brown sugar. Pulse several times until you have a coarse mixture.

In a large glass or ceramic mixing bowl, beat the egg. Add yoghurt, mixing well. Add the ground pork, along with the ham mixture. Mix with your hands thoroughly.

Grease a 9x5-inch loaf pan. Sprinkle with the remaining 2 tablespoons of brown sugar, tilting pan to distribute sugar evenly. Cut apple in half vertically through core. Remove core and seeds and slice remaining apple halves into thin slices. Layer apple slices down the center of the pan. Add meat mixture and pat down firmly. Bake at 350°F for about 50 to 55 minutes or until firm. Remove from oven and let rest 15 minutes, then pour off any excess liquid. Invert pan onto a platter and serve.
