- 2 cups oats

- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 2 tablespoons brown sugar or brown rice syrup
- ¼ cup ground flaxseed
- ½ cup whey protein powder
- ¼ cup butter, melted
- ¼ cup honey
- 1¼ cup Plain Mountain High Yoghurt
- ½ cup nuts (walnuts, pecans, or any other nut)
- ½ cup chocolate chips or dried cranberries or other dried fruit
- 2 to 3 ripe bananas, smashed

In a large glass or ceramic bowl, combine oats, flour, baking soda, brown sugar, flaxseed, and whey powder. In a medium mixing bowl, stir together melted butter, honey, yoghurt, nuts, chocolate chips or dried fruit, and bananas. With a spatula, fold wet mixture into the oat mixture. Pour batter into a greased 9x5½-inch loaf pan. Bake at 325°F for 18 to 22 minutes or until a toothpick inserted in the center comes out clean.
Makes 12 servings.
