12 ounces part skim ricotta cheese
- 2 teaspoons vanilla
- 1 pound powdered sugar
- 16 ounces Mountain High Yoghurt Cheese*
- ½ cup mini chocolate chips
- 12 cannoli shells
- Cocoa powder and additional powdered sugar for garnish

In a large glass or ceramic mixing bowl, beat ricotta cheese until creamy. Add vanilla and powdered sugar. Beat well. Gently fold in yoghurt cheese and mini chocolate chips.
Transfer mixture into a piping bag fitted with a large tip. Pipe mixture into each side of each cannoli shell to fill it completely. Garnish with cocoa powder and additional powdered sugar.
Makes 12 servings.
*To make Yoghurt Cheese, or Greek Yoghurt, place Plain Original Style Mountain High Yoghurt in a strainer lined with coffee filters or cheesecloth. Set strainer in a bowl, cover bowl with plastic wrap. Drain for at least 24 hours. Two cups of yoghurt will make about 8 oz. of Yoghurt Cheese. To learn more, click here.
