Fig Yoghurt Tart

The succulent juices from the figs release during baking to create a custard that is full of flavor.

  • 1½ cups Vanilla Mountain High Yoghurt®
  • 3 egg yolks
  • 1 tablespoon orange zest
  • 2 tablespoons dark brown sugar
  • 1 tablespoon honey
  • 1 teaspoon cardamom
  • 1 cup figs, stem removed and quartered

 

Heat oven to 425°F. Place pie crust in a tart pan, trimming to fit if necessary. Cover with foil and weigh down with pie weights, beans or rice. Bake 10 minutes. Remove foil and cook 3-4 more minutes. Remove and cool.

Whisk yogurt, egg yolks, orange zest, brown sugar, honey and cardamom in a bowl. Pour into cooled pie shell and top with figs.

Bake 30-35 minutes until just starting to brown and custard is set.

Serve with whipped cream or crème fraiche. 

Tips: You can substitute berries for the figs.
When choosing figs select ones that are plump but not too mushy.
