Apple Almond Yoghurt Cake

The yoghurt and sweet apples create a moist cake. The warm cider glaze gives a rich finish to this fresh fall cake. Enjoy for breakfast or dessert.

Cake

  • 2 cups of Super Moist French Vanilla Cake Mix® 
  • 1 cup Vanilla Mountain High Yoghurt®
  • ½ cup Almond flour (grind blanched almonds in food processor)
  • 3 eggs
  • 1/3 cup oil
  • 3 apples, peeled and finely chopped

Glaze

  • 4 tablespoons butter
  • ½ cup cup apple cider
  • 3 tablespoons dark brown sugar
  • 4 tablespoons white sugar
  • 2-3 tablespoons cream

Heat oven to 350°F. Spray or grease inch 10” spring form pan and place on a cookie sheet.  

Blend together cake mix, almond flour, yoghurt, eggs and oil. Gently stir in apples. Pour batter into the spring form pan.

Bake 40 minutes or until cake is firm to touch.

Glaze: 

Melt butter and sugars in a medium size saucepan over medium heat. Cook until sugars melt. Add in cream and cider, then cook for 4 minutes. Pour warm glaze over the cake.

Serve with whipped cream sprinkled with cinnamon.
