Guacamole

A classic base. Feel free to add 1 tablespoon minced jalapeno and 2 tablespoons minced
cilantro, as well as seeded, diced fresh tomatoes.  Serve with Gluten-Free tortilla chips or as a garnish....
 
  • 1 large avocado, pitted, peeled,
    and mashed
  • 1 cup Plain Mountain High Yoghurt
  • 3 teaspoons lime juice
  • 1 clove garlic, crushed
  • Salt and pepper

In a small glass or ceramic bowl, combine avocado and yoghurt until smooth. Add lemon juice and garlic. Season with salt and pepper to taste. Serve with gluten-free tortilla chips or as a garnish for Mexican dishes. Also delicious as a spread.

Makes 2 cups.
