Berry Yoghurt Pie

This crustless little number is as pretty as it is refreshing. Garnish with fresh mint leaves or milk chocolate curls.

  • 1 32-oz. container of Plain or
    Raspberry Mountain High Yoghurt
  • 1 8-oz. package of strawberry gelatin
  • Non-stick cooking spray
  • 8 strawberries, sliced

Mix yoghurt and gelatin in a medium glass or ceramic microwave-proof bowl. Microwave on medium power for 2 minutes or until the gelatin is completely dissolved, stirring after the first minute.

Spray a 9-inch pie plate with cooking spray and pour yoghurt mixture into it. Top with sliced strawberries. Cover and chill for 3 hours or until set.

Makes 8 servings.
