Creepy Yoghurt Eyeballs

The dish that stares back.

  • 1 cup Mountain High Yoghurt cheese*
  • 1/3 cup powdered sugar
  • 2 red apples
  • 2 fruit rolls, halved
  • 4 black licorice laces
  • 8 hard round candies
  • Red gel food coloring

Combine Yoghurt Cheese* and powdered sugar in a small glass or ceramic bowl. Mix well and refrigerate.

Meanwhile, quarter the apples. Trim away the core and discard. Next, on the skin side, cut a wedge out of the middle of each apple piece, being careful not to cut through the outer edge of the apple. Discard the center wedge. Brush the apples with lemon juice to prevent discoloration.

Mold half of a fruit roll into a nose shape. Repeat with remaining halves and set aside. Use a little water to smooth out the edges if needed. Cut licorice into pieces to create eyelashes and set aside.

Cut a slit into the top and sides of the apple wedge to insert the eyelashes. Remove yoghurt from the refrigerator and load into a cake decorating bag with a round tip. Pipe the yoghurt into the apple wedges to form the “eyeballs.” Decorate the yoghurt eyeballs with red food gel squiggles and top with a hard round candy. Place eyes and nose on a plate.

Serving suggestion: Line the plate with gelatin and chill until set before placing “eyeballs” on it.

Makes 4 servings.

*To make Yoghurt Cheese, place Plain Original Style Mountain High Yoghurt in a cheesecloth-lined strainer. Set strainer in a bowl, cover bowl with plastic wrap. Drain for at least 24 hours. Two cups of yoghurt will make about 8 oz. of Yoghurt Cheese. To learn more, click here.
