Dragon Eyes

A fun food activity that will let your imagination run wild.

  • 2 green apples
  • 6 tablespoons plus one teaspoon Mountain High Yoghurt cheese*, divided
  • ¼ cup powdered sugar
  • hard green candies
  • 4 red gummy candies
  • Green sugar
  • 1 toothpick

Quarter the apples. Trim away the core and discard. Next, on the skin side, cut a wedge out of the middle of each of the apple pieces, being careful not to cut through the outer edge of the apple. Reserve three of the wedges. Brush the apples with lemon juice to prevent discoloration.

Remove yoghurt from the refrigerator. Roll one tablespoon of yoghurt cheese into a ball and drop into powdered sugar to coat. Repeat to make 6 balls. Insert two balls into apple slices for eyes. Add two green candies to form the center of the eye. Use the three center wedges to create the eyebrows and mouth. Attach eyebrows to eyeballs with a toothpick. Place head near the edge of a plate.

Make four more yoghurt balls and place in the apple wedges as shown. Arrange on a plate behind the dragon’s head to create the dragon’s back. Create a tongue from the remaining teaspoon yoghurt cheese and coat in green sugar. Place tongue on mouth. Decorate the body with green sugar and red gummy candies.

Makes 2 servings.
