Green Bean Casserole
A modern spin on a traditional family favorite, with less sodium.

  • 1¾ cups sliced mushrooms
  • 1 cup Plain Mountain High Yoghurt
  • 2 tablespoon all-purpose flour
  • 1 8 oz. package French-cut frozen green beans, thawed
  • 1 tablespoon sugar
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 1 1/3 cups canned French-fried
        onions, divided 



In a medium skillet over medium-high heat, melt butter and sauté mushrooms for about 4 to 5 minutes. Remove from heat.

In a large glass or ceramic bowl, combine yoghurt with flour. Add green beans, sugar, salt, pepper, and cooked mushrooms. Mix well. Add half of the fried onions and mix well. Pour into a 1½ -quart casserole dish. Top with the remaining fried onions. Bake at 350ºF for about 30 minutes, until bubbly around edges.
