Home-Style Meatloaf
Yoghurt keeps the meat moist in this classic comfort food. Just don’t overmix the meat or it will get tough.
  • 1½ pounds 85% lean ground beef, finely ground
  • ½ cup Plain Mountain High Yoghurt
  • ¼ cup chopped onion
  • ¼ cup diced carrots
  • 3 cloves garlic, minced
  • ¼ cup tomato paste
  • 1 tablespoon spicy brown mustard
  • 2 eggs, beaten
  • 2 tablespoons Italian seasoning
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¾ cup breadcrumbs

In a large glass or ceramic bowl, combine all ingredients. Mix with hands just until well combined.

Place mixture into a 9 x 5” loaf pan. Bake at 350ºF for approximately 50 minutes or until a meat thermometer inserted in the center reads 160ºF.

Makes 8 servings.
