Easy Fruit "Trifle"


This easy dessert makes a big impression with very little effort. Feel free to vary it with your favorite fruit and favorite flavor of Mountain High and build it the way you want it.

 

  • recipe_main_easy_yoghurt_trifle1 12-oz. angel food cake torn or sliced into 1" cubes (or 1/2" cubes if making individual trifles), about 6 cups
  • 4 cups fresh fruit slices or pieces (use smaller dice for individual trifles)
  • 6 cups Vanilla Mountain High Yoghurt
  • Additional fresh fruit pieces for garnish
  • Almond slices or chocolate shavings for garnish

 

 In a 3-quart trifle bowl or 6 individual parfait glasses, layer one third of the cake, one third of the fruit, and one third of the yoghurt. Repeat two more times with the remaining thirds of the ingredients, finishing with yoghurt on top. (Note: For individual glasses, it may be easier to layer the ingredients only twice.) Garnish with additional fresh fruit pieces and almond slices or chocolate shavings. To prepare shavings, use a vegetable peeler to scrape shavings off a milk or dark chocolate bar. For best results, shave the chocolate directly onto the finished dish, distributing it evenly across the surface. 

Makes 6 servings.

 

Variations: Use whatever fruit is in season: berries, cherries, peaches, kiwi, grapes, mangoes, or bananas. You can also use Strawberry or other fruit-flavored varieties of Mountain High Yoghurt. We like to make this with Original Style because we like the extra creaminess for a trifle, but Lowfat or Fat Free work fine, too. Be creative on garnishes as well: try candied nuts, blueberries, slivered almonds, or mint leaves. The beauty of a trifle is you can build it so many ways!
