Lowfat Enchiladas
 
 
 
Pineapple Carrot Salad

Great with ham, grilled pork, or barbecued chicken.
  • 4 medium carrots, peeled and grated
  • 1 cup Plain Mountain High Yoghurt
  • 1 cup canned crushed pineapple,
    drained
  • ¼ cup raisins
  • ¼ cup chopped walnuts

In a large glass or ceramic bowl, stir together all ingredients until well mixed. Cover and chill overnight. Serve chilled.
