Pork and Apple Fritters

Add these fritters to your “favorites” list.
  • 1½ cups all-purpose flour
  • ½ cup yellow corn grits
  • 2½ teaspoons baking powder
  • 1 tablespoon sugar
  • ¼ teaspoon salt
  • 2¼ cups Plain Mountain High Yoghurt, divided
  • 10 ounces pork loin, cut into ¼-inch cubes
  • 2 red apples, cut into ¼-inch dice
  • Canola oil
  • Honey

In a large glass or ceramic mixing bowl, combine flour, grits, baking powder, sugar, and salt. Mix well. Add 2 cups of yoghurt, pork, and apples. Mix well.

In an electric skillet, heat about one inch of oil to 350ºF. Drop some of the batter by large serving spoons (about ¼ cup) gently into the oil. Make only several fritters at a time. Do not overcrowd pan or fritters won’t be crisp. Cook for about 3 to 4 minutes on each side. To avoid splattering hot oil, use a spatula and a slotted spoon to flip the fritters. Drain on paper towels and keep warm.

Serve fritters with honey and a dollop of the remaining yoghurt.

Makes about 18 servings.
