Cucumber Raita
Raitas are whole milk yoghurt salads used as a counterbalance
to spicy or hot dishes in Indian cuisine. They come in many flavors and types.
This one is especially good with curries and grilled lamb.
  • 1 large cucumber, peeled,
    seeded, and grated
  • ¼ teaspoon ground cumin
  • 1/8 teaspoon cayenne pepper
  • ¼ teaspoon salt
  • ½ tablespoon minced fresh cilantro
  • ¾ cup Plain Mountain High Yoghurt

With your hands, squeeze all the liquid from the grated cucumber. Place in a medium glass or ceramic mixing bowl. Add the cumin, cayenne, salt, and cilantro. Mix well. Gently stir in yoghurt. Add more cayenne to taste, if desired. Cover and chill for 30 minutes.

Makes 4 servings.
