Horseradish Sauce
The classic accompaniment for prime rib or roast beef, updated with a few
welcome surprises, like replacing high-fat sour cream with yoghurt.
One taste and you'll ask, "Why didn't I think of this before?"
  • 6 scallions (white part only), minced
  • 1 cup Plain Mountain High Yoghurt
  • 1 to 2 tablespoons prepared
    horseradish
  • 2 teaspoons maple syrup
  • 2 tablespoons heavy cream

In a small glass or ceramic bowl, combine scallions, yoghurt, horseradish, maple syrup and heavy cream, mixing well.

Makes 1¼ cups.
