Curried Fruit Salad
A deliciously different take on the traditional picnic side dish. Any combination of fruit works equally well for this recipe. Experiment with your favorites!
  • 1 cup sliced strawberries
  • 1 8-oz. can of pineapple chunks, drained
  • 1 large apple, cored and diced
  • 1 cup seedless grapes, halved
  • 1 banana, sliced
  • ½ cup shredded coconut
  • ½ cup raisins or currants
  • 1 cup Vanilla Mountain High Yoghurt
  • 1 teaspoon orange zest
  • ½ teaspoon curry powder

Place fruits, coconut, and raisins in a large glass or ceramic bowl. Toss to combine.

In a small glass or ceramic bowl, gently stir yoghurt, orange zest, and curry powder until well combined. Pour over the fruit mixture and toss to coat fruit evenly. Cover and chill for 1 hour. Serve chilled.

Makes 6 servings (1 cup each).
