Toss and Crunch Coleslaw

An easy side dish to whip up for a picnic or cookout. Look for coleslaw mix (a blend of shredded red and green cabbage and carrots) in the produce aisle near the packaged salads.

  • 1 16-oz. package coleslaw mix
  • 2 tablespoons minced onion
  • 1/3 cup white sugar
  • ½ teaspoon salt
  • 1/8 teaspoon ground black pepper
  • ¼ cup milk
  • ¼ cup mayonnaise
  • ½ cup Plain Mountain High Yoghurt
  • 1½ tablespoons white wine vinegar
  • 2½ tablespoons lemon juice

Combine coleslaw mix and onion in a large glass or ceramic bowl. Set aside.

In a separate glass or ceramic bowl, whisk together sugar, salt, pepper, milk, mayonnaise, yoghurt, vinegar, and lemon juice until smooth. Pour mixture over the coleslaw and onion; toss to combine well. Cover and chill for at least 1 hour before serving. Toss again just before serving. Refrigerate any leftovers.

Makes 8 servings.
