
BBQ Beef Potatoes

Ingredient List
- 4 baking potatoes (1 1/2 lb)
- 2/3 cup from 1 tub Mountain High™ Original Plain Whole Milk Yoghurt
- 1/2 cup barbeque sauce
- 2 teaspoons finely chopped garlic
- 1 teaspoon dried oregano leaves
- 1 teaspoon coriander seed, crushed
- 1 teaspoon paprika
- 1/4 teaspoon pepper
- 1/4 teaspoon kosher (coarse) salt
- 1 pound beef top round steak, chopped
- 1/4 cup chopped red onion
- 1/4 cup from 1 tub Mountain High™ Original Plain Whole Milk Yoghurt
- Chopped fresh parsley, if desired
Preparation
- In a large bowl, whisk together 2/3 cup yoghurt, barbecue sauce, garlic, oregano, coriander, paprika, pepper and salt. Stir in steak pieces until evenly coated with barbecue mixture.
- Spread evenly in 1 1 x 7 baking dish sprayed with cooking spray. Bake uncovered at 350°F for 10 to 15 minutes or until beef is just pink in the center.
- Meanwhile, pierce potatoes with fork; arrange in circle on microwavable paper towels in microwave oven. Microwave uncovered on High 5 minutes; turn potatoes over. Microwave 5 minutes longer or until potatoes are tender when pierced in center with fork. Wrap each potato individually with aluminum foil to keep warm.
- Remove foil; Cut large X in top of each baked potato; press sides slightly to fluff. Top potatoes with beef mixture; sprinkle with onion. Top each potato with a tablespoon of the remaining 1/4 cup yoghurt; sprinkle with parsley.
