
Chicken Tomato Basil Soup

Ingredient List
- 1 tablespoon olive oil
- 1 cup chopped onion
- 2 stalks celery, chopped
- 2 cans (14.5-oz each) diced tomatoes, undrained
- 1 tablespoon finely chopped garlic
- 1 tablespoon dried basil leaves
- 1/2 teaspoon pepper
- 1/2 teaspoon salt
- 1 teaspoon sugar
- 1 pound shredded, cooked chicken breast
- 2 cups from 1 tub Mountain High™ Original Plain Whole Milk Yoghurt
Preparation
- Heat olive oil in Dutch oven over medium-high heat. Cook and stir onion and celery in oil about 5 minutes or until translucent. Stir in tomatoes, garlic, basil, pepper, salt, and sugar. Cook uncovered 5 minutes stirring occasionally.
- Add chicken and yoghurt. Cook uncovered 10 minutes, stirring occasionally until hot (do not boil).
