Chicken Tomato Basil Soup

Ingredient List

  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 2 stalks celery, chopped
  • 2 cans (14.5-oz each) diced tomatoes, undrained
  • 1 tablespoon finely chopped garlic
  • 1 tablespoon dried basil leaves
  • 1/2 teaspoon pepper
  • 1/2 teaspoon salt
  • 1 teaspoon sugar
  • 1 pound shredded, cooked chicken breast
  • 2 cups from 1 tub Mountain High™ Original Plain Whole Milk Yoghurt

Preparation

  1. Heat olive oil in Dutch oven over medium-high heat. Cook and stir onion and celery in oil about 5 minutes or until translucent. Stir in tomatoes, garlic, basil, pepper, salt, and sugar. Cook uncovered 5 minutes stirring occasionally.
  2. Add chicken and yoghurt. Cook uncovered 10 minutes, stirring occasionally until hot (do not boil).
