Chilled Shrimp Bisque

A refreshing first course for an al fresco dinner.

Ingredient List

  • 1 1/2 pounds cooked deveined peeled medium shrimp, thawed if frozen, tail shells left on
  • 2 cups from 1 tub Mountain High™ Original Plain Whole Milk Yoghurt
  • 1 1/2 cups chicken or vegetable broth
  • 2 teaspoons Dijon mustard
  • 3/4 teaspoon onion salt
  • 1/4 teaspoon ground white pepper
  • 1/2 cup finely shredded cucumber
  • 1/2 teaspoon grated lemon peel
  • 1 teaspoon honey
  • Finely chopped green onion, if desired

Preparation

  1. Reserve 4 of the cooked shrimp; cover and chill until ready to serve. Remove tail shells from remaining shrimp and discard.
  2. In a blender or food processor, combine shrimp, yoghurt, broth, mustard, onion salt, and white pepper. Cover and pulse until smooth.
  3. In a large bowl, combine shrimp mixture, cucumber, lemon peel, and honey. Cover and chill for 2 to 4 hours to blend flavors. Ladle into individual bowls and garnish with reserved shrimp and green onions. Serve immediately.
