
Chilled Shrimp Bisque

Ingredient List
- 1 1/2 pounds cooked deveined peeled medium shrimp, thawed if frozen, tail shells left on
- 2 cups from 1 tub Mountain High™ Original Plain Whole Milk Yoghurt
- 1 1/2 cups chicken or vegetable broth
- 2 teaspoons Dijon mustard
- 3/4 teaspoon onion salt
- 1/4 teaspoon ground white pepper
- 1/2 cup finely shredded cucumber
- 1/2 teaspoon grated lemon peel
- 1 teaspoon honey
- Finely chopped green onion, if desired
Preparation
- Reserve 4 of the cooked shrimp; cover and chill until ready to serve. Remove tail shells from remaining shrimp and discard.
- In a blender or food processor, combine shrimp, yoghurt, broth, mustard, onion salt, and white pepper. Cover and pulse until smooth.
- In a large bowl, combine shrimp mixture, cucumber, lemon peel, and honey. Cover and chill for 2 to 4 hours to blend flavors. Ladle into individual bowls and garnish with reserved shrimp and green onions. Serve immediately.
