Chilled Strawberry Borscht

Ingredient List

  • 1 can (14.5 oz) sliced beets, undrained
  • 2 cups chicken broth
  • 1 cup from 1 tub Mountain High™ Original Strawberry Whole Milk Yoghurt
  • 2 tablespoons sugar
  • 1/2 teaspoon kosher (coarse) salt
  • 1 cup peeled, seeded, chopped cucumber
  • 2 green onions, thinly sliced
  • 4 tablespoons from 1 tub Mountain High™ Original Plain Whole Milk Yoghurt
  • 1 tablespoon parsley, chopped

Preparation

  1. Pour beet juice from can into a large bowl. Slice the beets into 1/2 inch-wide pieces; set aside.
  2. Whisk chicken broth, yoghurt, sugar, and salt with beet juice. Stir in cucumber, green onions and beets. Cover and chill for one hour. Spoon into chilled bowls; garnish with a dollop of plain yoghurt and sprinkle with parsley.
