An elegant appetizer course for a dinner party and it’s easy to double.
Ingredient List
- 4 large tomatoes
- 1 teaspoon butter
- 1 refrigerated container (8 oz) pasteurized lump crabmeat, well drained, cartilage removed
- 1/4 cup unseasoned dry bread crumbs
- 1/4 cup mayonnaise
- 1/2 cup from 1 tub Mountain High™ Original Plain Whole Milk Yoghurt
Preparation
- Slice tops off each tomato (about 1/2” from top) and remove and discard seeds. Scoop out and dice centers. Set aside.
- Cut a thin slice from bottom of each tomato to help it stand upright. Place hollowed tomatoes upside down on a cooling rack to drain.
- Meanwhile, heat butter in a 10-inch skillet over medium heat. Add the chopped tomato pieces. Cook until slightly softened, stirring frequently. Stir in crabmeat and breadcrumbs. Remove from heat.
- In a medium bowl, gently mix mayonnaise and yoghurt. Add crabmeat mixture and fold together to blend.
- Place tomatoes, right side up, in ungreased rectangular baking dish. Spoon crab mixture into tomatoes, and bake at 350°F for 20 minutes until thoroughly heated.
