Ingredient List

  • 1 cup quick-cooking oats
  • 1 cup Mountain High® original or lowfat plain yoghurt
  • 1 1/4 cups all-purpose flour
  • 1 tablespoon baking powder
  • 3/4 cup real maple syrup
  • 1/4 cup butter, melted and cooled
  • 1 egg, slightly beaten
  • 1/2 cup raisins
  • 12 pecan halves

Preparation

  1. In a large bowl, combine oats and yoghurt. Let stand 5 minutes. In a medium bowl, combine flour and baking powder.
  2. Stir syrup, butter, egg, and raisins into yoghurt mixture; mix well. Add flour mixture, stirring just until moistened. Divide evenly among 12 greased muffin cups. Press a pecan half lightly onto the batter in each cup.
  3. Bake at 400°F for 20 to 25 minutes until golden or a toothpick inserted near center of muffin comes out clean. Cool 5 minutes; carefully remove from pan to cooling rack. Serve warm if desired.
