Mexican Bean Dip

Ingredient List

  • 1 can (16 oz) refried beans
  • 1 jar (16 oz) salsa
  • 1 cup Mountain High® original, lowfat or fat free plain yoghurt
  • 1/2 cup shredded cheddar cheese
  • 3 chopped green onions
  • 1-2 tablespoons finely chopped red onion, if desired
  • Tortilla chips, if desired

Preparation

  1. Place refried beans and salsa in a 2-quart saucepan and warm over low heat, stirring often, until heated through. Gently stir in yoghurt and continue heating, stirring occasionally, until heated through again.
  2. Spoon into serving dish. Sprinkle with shredded cheddar, scallions, and red onion to taste. Serve with a basket of tortilla chips.
