Ingredient List
Pork Bundles
- 1 pork tenderloin (about 18 oz)
- 1 red bell pepper, cut into 1/4-inch strips
- 1 yellow bell pepper, cut into 1/4-inch strips
- 4 green onions
Chili Lime Sauce
- 2 ounces cream cheese (from a 3-oz pkg), softened
- 1 teaspoon finely chopped garlic
- 1/4 teaspoon sugar
- 1/8 teaspoon ground chipotle chili pepper
- 1 teaspoon grated lime peel
- 1/8 teaspoon salt
- 1/2 cup Mountain High® original or lowfat plain yoghurt
Preparation
- Spray shallow roasting pan with cooking spray. Place pork in pan. Insert oven thermometer so tip is in thickest part of pork. Roast uncovered at 450°F 25 to 30 minutes or until thermometer reads 145°F. Remove from oven and set aside to rest.
- Meanwhile, make the sauce: In a small bowl, combine cream cheese, garlic, sugar, chipotle powder, lime zest, and salt. Mix well. Stir in yoghurt with whisk until smooth. Set aside.
- Slice pork on the bias (at a 45-degree angle) to make about 12 elongated oval slices about 1/4-inch thick (use small end pieces for another use. Set aside.
- Cut the white ends off of the green onions; discard. Peel each green onion lengthwise into 2 to 4 individual “strings”, about 1/4-inch thick. Place on microwavable paper towel. Microwave on high for 5 to 8 seconds or until wilted.
- To assemble the bundles, lay one slice of pork on a work surface and place 3 to 4 bell pepper strips lengthwise along the center of pork. Roll up and tie with a green scallion string; trim ends with scissors. Serve at room temperature with Chili Lime Sauce.
