Ingredient List

Pork Bundles

  • 1 pork tenderloin (about 18 oz)
  • 1 red bell pepper, cut into 1/4-inch strips
  • 1 yellow bell pepper, cut into 1/4-inch strips
  • 4 green onions

Chili Lime Sauce

  • 2 ounces cream cheese (from a 3-oz pkg), softened
  • 1 teaspoon finely chopped garlic
  • 1/4 teaspoon sugar
  • 1/8 teaspoon ground chipotle chili pepper
  • 1 teaspoon grated lime peel
  • 1/8 teaspoon salt
  • 1/2 cup Mountain High® original or lowfat plain yoghurt

Preparation

  1. Spray shallow roasting pan with cooking spray. Place pork in pan. Insert oven thermometer so tip is in thickest part of pork. Roast uncovered at 450°F 25 to 30 minutes or until thermometer reads 145°F. Remove from oven and set aside to rest.
  2. Meanwhile, make the sauce: In a small bowl, combine cream cheese, garlic, sugar, chipotle powder, lime zest, and salt. Mix well. Stir in yoghurt with whisk until smooth. Set aside.
  3. Slice pork on the bias (at a 45-degree angle) to make about 12 elongated oval slices about 1/4-inch thick (use small end pieces for another use. Set aside.
  4. Cut the white ends off of the green onions; discard. Peel each green onion lengthwise into 2 to 4 individual “strings”, about 1/4-inch thick. Place on microwavable paper towel. Microwave on high for 5 to 8 seconds or until wilted.
  5. To assemble the bundles, lay one slice of pork on a work surface and place 3 to 4 bell pepper strips lengthwise along the center of pork. Roll up and tie with a green scallion string; trim ends with scissors. Serve at room temperature with Chili Lime Sauce.
