Potato Casserole

A traditional favorite that tastes just like the original, but is lightened up with yoghurt.

Ingredient List

  • 1 cup Mountain High® plain yoghurt
  • 1 can (10 3/4 oz) condensed cream of chicken soup
  • 3/4 cup butter, melted and cooled slightly
  • 1/2 cup chopped onion
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 pkg (26 oz) frozen shredded hash browns, thawed
  • 1 cup crushed corn flakes

Preparation

  1. In a large bowl, mix yoghurt, soup, 1/2 cup of the melted butter, onion, salt, and pepper. Add hash browns and mix well to coat evenly. Pour mixture into a greased 9x13-inch baking dish.
  2. In a small bowl, combine corn flakes with remaining 1/4 cup melted butter. Sprinkle cornflake mixture evenly on top of casserole. Bake uncovered at 350°F for 45-60 minutes until golden brown on top.
