
Radish Salad

Give those greens a rest and dig into this! Daikon is a large, crisp Asian radish with a sweet, firm, white flesh (like a jicama with a bit of a bite). Salting it drains excess moisture for a crisper salad.
Ingredient List
- 2 cups peeled, shredded daikon radish
- 1/4 teaspoon kosher (coarse) salt
- 2 tablespoons finely chopped red onion
- 1/2 cup Mountain High® original, lowfat or fat free plain yoghurt
- 1 teaspoon sugar
- 1 tablespoon orange marmalade
- 1 tablespoon heavy whipping cream
- 1/4 teaspoon kosher (coarse) salt
- 1/4 teaspoon pepper
- 1 tablespoon finely chopped fresh parsley
- 1 cup thinly sliced red radishes
- 1 cup thinly sliced fennel
- 1/2 cup fresh corn kernels (from one ear)
- Salad greens, if desired
Preparation
- Place shredded daikon radish in a colander and toss with 1/4 teaspoon salt. Let radish drain while preparing remaining ingredients.
- In a small bowl, combine red onion, yoghurt, sugar, marmalade, cream, salt, pepper, and parsley, mixing well.
- In a large bowl, combine drained daikon, red radishes, fennel, and corn. Pour dressing over vegetables and mix well. Serve immediately on salad greens.
