
Sweet Potato Salad

The sweet potato is the unsung hero of the vegetable bin. You can serve it hot or cold, solo, in a pie, in a side dish, or–as showcased here–in a deliciously refreshing salad.
Ingredient List
- 1 1/2 pounds sweet potatoes
- 2 stalks celery, chopped
- 1/2 cup (from a 8-oz can) drained crushed pineapple
- 1/2 cup chopped walnuts, toasted
- 2 tablespoons finely chopped shallot
- 1 cup Mountain High® original, lowfat or fat free vanilla yoghurt
- 2 tablespoons soy sauce
- 1 tablespoon finely chopped gingerroot
- 1/2 teaspoon five-spice powder
- 1 tablespoon honey
- Additional Mountain High® original, lowfat or fat free vanilla yoghurt, if desired
Preparation
- Prick sweet potatoes several times with fork; place on paper towel in microwave. Microwave on High 8 to 10 minutes, turning potatoes over once halfway through cooking, just until potatoes are almost tender. Allow to cool to room temperature; peel and cut into 1-inch cubes.
- Place sweet potatoes, celery, pineapple, and walnuts in a large bowl. Toss to combine.
- In a medium bowl, gently combine shallot, yoghurt, soy sauce, ginger, five spice powder and honey. Pour yoghurt mixture over potato mixture and stir to coat all pieces evenly
- Cover and chill for two hours before serving to blend flavors. Serve with a dollop of additional yoghurt. Cover and refrigerate any leftover salad.
