Tomato Basil Bisque

Comfort food for a cold day, a blue day, any day! Because it uses yoghurt instead of cream, this recipe is much healthier than traditional bisque but just as creamy. Use fresh basil for full flavor. Serve with warm crusty bread and a salad.

Ingredient List

  • 2 tablespoons butter
  • 1 onion, chopped
  • 1 teaspoon finely chopped garlic
  • 1 can (28 oz) crushed tomatoes, undrained
  • 2 cups chicken broth
  • 1 can (8 oz) tomato sauce
  • 1 teaspoon sugar
  • 2 tablespoons finely chopped fresh basil leaves
  • 1 cup Mountain High® original or lowfat plain yoghurt
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Preparation

  1. Melt butter in a Dutch oven over medium heat. Cook and stir onion in butter about 8 minutes or until soft and translucent. Add garlic. Cook and stir 2 minutes. Stir in crushed tomatoes. Cook uncovered over medium heat for 5 minutes, stirring occasionally.
  2. In blender, cover and puree tomato mixture in small batches (add some of the chicken broth if purée is too thick to blend properly). Return tomato mixture to Dutch oven. Add chicken broth, tomato sauce, and sugar. Heat to boiling; reduce heat. Cover and simmer 15 minutes. Stir in basil and simmer for 5 minutes more. Remove soup from heat and whisk in yoghurt, salt and pepper.
