1 medium yellow onion, small-diced

2 tablespoons fresh lemon juice 1/4 cup olive oil

1/2 teaspoon ground black pepper

2 tablespoons brown sugar, packed

2 pounds large shrimp (21-25 per pound), peeled and deveined

Mountain High® yoghurt
Instructions

Combine seasonings and coat shrimp

Grill or pan fry raw shrimp in olive or coconut oil

Chop veggies and combine for salsa

Top with original or low-fat plain Mountain High® yoghurt

Garnish with lime and fresh herbs
