Mediterranean Chicken Salad

Mountain High® plain yoghurt provides a simple addition to this chicken and veggie salad – perfect for Mediterranean dinner.
Ingredient List
- 1/2 cup mayonnaise
- 1 1/2 cups Mountain High® plain yoghurt
- 1/2 cup fresh basil leaves
- 2 tablespoons lemon juice
- 2 cups cubed deli rotisserie chicken
- 1 cup potatoes, peeled, cooked, cubed
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1/2 cup Greek olives, pitted
- 1/4 cup capers, rinsed
- 1/4 cup chopped red onion
Preparation
- In food processor, place mayonnaise, 1/2 cup of the yoghurt and the basil. Cover; process until pureed. Add lemon juice; process. Place mixture in large bowl.
- Add remaining 1 cup yoghurt, and mix well. Fold in chicken, potatoes, bell peppers, olives, capers and onion; season with salt and pepper as desired.
- Cover and chill 3 hours before serving. Garnish with fresh basil.
Tips
- If desired, serve salad on top of mixed salad greens.
- Garnish with fresh basil sprigs.
