Mountain High® plain yoghurt provides a simple addition to this chicken and veggie salad – perfect for Mediterranean dinner.

Ingredient List

  • 1/2 cup mayonnaise
  • 1 1/2 cups Mountain High® plain yoghurt
  • 1/2 cup fresh basil leaves
  • 2 tablespoons lemon juice
  • 2 cups cubed deli rotisserie chicken
  • 1 cup potatoes, peeled, cooked, cubed
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1/2 cup Greek olives, pitted
  • 1/4 cup capers, rinsed
  • 1/4 cup chopped red onion

Preparation

  1. In food processor, place mayonnaise, 1/2 cup of the yoghurt and the basil. Cover; process until pureed. Add lemon juice; process. Place mixture in large bowl.
  2. Add remaining 1 cup yoghurt, and mix well. Fold in chicken, potatoes, bell peppers, olives, capers and onion; season with salt and pepper as desired.
  3. Cover and chill 3 hours before serving. Garnish with fresh basil.

Tips

  • If desired, serve salad on top of mixed salad greens.
  • Garnish with fresh basil sprigs.
