Shrimp and Herb Taco Topper

Ingredients

  • 1 medium yellow onion, small-diced
  • 1/4 cup minced fresh parsley
  • 3-4 fresh thyme sprigs, leaves removed 1/4 cup minced fresh basil leaves
  • 2 teaspoons ground paprika
  • 2 tablespoons fresh minced garlic
  • 2 tablespoons fresh lemon juice 1/4 cup olive oil
  • 1/2 teaspoon ground black pepper
  • 2 tablespoons brown sugar, packed
  • 2 pounds large shrimp (21-25 per pound), peeled and deveined
  • Mountain High® yoghurt

Instructions

  1. Combine seasonings and coat shrimp
  2. Grill or pan fry raw shrimp in olive or coconut oil
  3. Chop veggies and combine for salsa
  4. Top with original or low-fat plain Mountain High® yoghurt
  5. Garnish with lime and fresh herbs
